Eureka!

So I'm sure the folks here are wondering when I will post about this amazing place....

Eureka!
These are just the appetizers, and not even all of them!

This cozy spot is soon to be the most talked about Eatertainment spot in Boulder. Located right on the corner of 10th and Pearl St. in a beautifully renovated building, sits Eureka! (it's so good that the exclamation point is in the name).

American Craft

That is our mission statement here. Everything, from the hand crafted Panko breadcrumbs on the onion rings, to the local farm raised beef is American Craft. What exactly does that mean you ask? It's something incredible. Everything in our kitchen is hand made daily, most of it is locally sourced, our coffee comes from right across the street at Ozo. Even our drink list is American, 99.9% to be exact. Only our tequila doesn't come from this great country (there isn't such a thing as American tequila).




The whole concept goes even farther than just American Craft, here at Eureka! Boulder most of the drinks are local. Our vodka is from Spring 44 up in Loveland, almost all of the 20 permanent taps are Colorado breweries, and again you can look out the window and almost see the coffee being made.

Open September 5th!

I can't wait to share this spot with everyone I know. We are still in very early stages of opening, just started our first week of training. Soon though you will all be able to come here and try some of the most amazing, unique items from the Bone Marrow Burger, to the surprisingly wonderful Coleslaw.

The Slaw (middle circle plate) has wonderful flavors and a bit of spice. You definitely can't go wrong with the Sweet Potato Fries or the GIGANTIC Onion Rings.

The Tomato Soup is so simplistic and full of flavor. I know I will eat way too much once the snow comes.

Seriously this place is going to be busy every day. From our Hoppy Hour, to the Sunday brunch, we will keep you coming back for more and more and more and more......
